Ingredients

  • Radicchio - 250gr

  • Pancetta (possibly with its rind) - 120gr

  • Extra Virgin Olive Oil - 40gr

  • "Suited garlic”cloves - 3

  • Red Wine Vinegar - 30gr

  • Black Pepper corns - 2gr

  • Salt - 1gr

Instructions

  • 1.
    Cleaning, washing and tearing the radicchio

    • Radicchio - 250gr
    • Black Pepper corns - 2gr
    • Salt - 1gr

      With a paring knife, chop off the radicchio roots and collect its leaves into the kitchen sink. FIll the sink with fresh water, optionally add the sterilising fluid according to instructions and soak the leaves for 10-15 minutes. Move the leaves from time to time to allow the dirt fall on the bottom (step 1 - pic. A).
      Collect the leaves into a large bowl, change the old with new fresh water and rinse the leaves from any remaining trace of dirt and sterilising fluid.
      Meanwhile, finely crush the black pepper corn with pestle and mortar and set it aside.
      Collect the leaves and dry them using a kitchen towel or a salad spinner.
      Place it into the serving bowl and season with black pepper and salt (step 1 - pic. B)..

  • 2.
    Dicing and frying the pancetta, garlic and vinegar

    • Pancetta (possibly with its rind) - 120gr
    • Extra Virgin Olive Oil - 40gr
    • Suited Garlic - 3 cloves
    • Red Wine Vinegar - 30gr

      Cut off the pancetta rind and add to the extra virgin olive oil and garli cloves into the frying pan. Set the heat on a medium-high power and let the rind sweat and melt its fat (step 2 - pic. A)..
      Dice the pancetta into even small cubes and add it to the frying pan. Let it fry and brown slightly, then, when it start getting crispy, increase the heat and add the red wine vinegar. Let the vinegar bubble vigorously for a few seconds, then take the pan away from the heat (step 2 - pic. B)..

  • 3.
    Seasoning the radicchio with the pancetta sauce

      Let the sauce cool for a few seconds away from the heat, then drop it on top of the radicchio, stir evenly and serve immediately (step 3 - pic.)..
